My first and favorite collection is housed in my tea room. I have every teapot, coffee pot, and teacup in the game, I believe. I love adding to it as a new one is released:

I recently started a bakery that is my current project/obsession. I'm working on collecting one of every pastry item, but it's difficult. There are a few rarer items like the hella expensive round fruitcake that I can't buy, so this is more of a "just for fun" collection, not necessarily ever to be fully completed. :-)

I used to collect gift boxes also in an organize way. But there was a glitch then, that everytime I go to the house to put new ones. More of the boxes just go back to my inventory. Frustrated of putting them all over again in order when they were released, I just clicked them all the way down.

I too would offer to help box collectors, they can't be gifted/traded/or put in AH right now. Most are tagged free gift.

I collect the ghost toys from the jobs section. I just love those! I like to put one or two in all of my houses.
