Is anyone up for a recipe exchange? Food is a universal language that we all speak and I'm genuinely curious as to what everyone likes.

If anyone enjoys peanut butter like the wife does, then this is your ticket to paradise. I've developed this recipe to satisfy her cravings for honey and peanut butter. But if you like chocolate, swap out the honey in the icing for 2 Tbsp of unsweetened cocoa powder. You won't be angry. These are the perfect "chewy" and you'll never eat just one.


Chewy Peanut Butter Bars

INGREDIENTS


1 C Peanut Butter
2/3 C Butter, softened
1 1/3 C White Sugar
1 C Packed Brown Sugar
4 Eggs
2 Tsp Vanilla
2 C Flour
2 Tsp Baking Powder
¼ Tsp Salt

Icing

½ C Butter, softened
2 C Powdered Sugar
2 Tbsp Honey
1 Tsp Cinnamon
Heavy Cream as needed.


DIRECTIONS

Preheat oven to 350 degrees.
Grease 13x9 pan.
In a medium bowl, cream together peanut butter and margarine.
Gradually blend in the sugars, eggs, and vanilla until fluffy.
Combine flour, baking powder, and salt and mix into the peanut butter mixture until well blended.
Bake for 35 minutes (top center springs back when touched).
Cool completely at least an hour.
Whip butter until fluffy.
Add powdered sugar, cinnamon, and honey and mix thoroughly.
Add and mix heavy cream to desired consistency.
Spread over bars and allow to set.

Shakshuka

1 tablespoon olive oil
5 green onions, chopped
1 sliced bell pepper, color doesn’t matter
2 cloves minced garlic
1 (14 ounce can) fire roasted tomatoes
1/2 teaspoon ground cumin
1/2 teaspoon smoked paprika
1/2 teaspoon ground coriander
Salt & pepper, to taste
5 spears of asparagus, chopped into thin pieces
2 eggs
1/4 cup crumbled feta cheese
2 tablespoons roughly chopped fresh cilantro

In a cast iron skillet, saute the onions and bell peppers, with the garlic, in the olive oil. Once everything is soft, about 5 minutes, add the spices. Then add the can of tomatoes. Bring to a boil, turn heat to low and simmer for about 20 minutes. Make 2 wells, crack 1 egg into each well. Cover with a lid or foil just until the white on the egg is set.
Sprinkle with feta and fresh cilantro.
Serve with a crusty bread.
