I can't take pics cause we ate it all long ago. We had BBQ Ribs in the crock pot all day, carrots, potatoes, home made coleslaw.........I made enough to take to my Dad and Mom at the nursing home tomorrow. :thumbsup:

I've got a pot of spaghetti and meatballs going on the stove now. Got a really late start to supper as I slept most of the day away...good thing I keep stuff in the freezer or I'd be eating bread and butter tonight lol.

I took a slow cooker recipe I found and modded it for stovetop. I call it Sweet & Tangy Chicken. I made a savory Chinese rice recipe with soy, chicken broth, ginger, and red pepper. Then the chicken is grilled 3 minutes a side and I added onion, garlic, green and red bell pepper, for a few more minutes. Then I poured chunk pineapple and juice into the pot and added BBQ sauce to top it off. After boiling it up, I let it reduce for 15 minutes on low. It was as good as it looks.

I don't have any pictures right now, but I am having fun converting recipes to healthy, paleo ingredients. I've also really gotten into using my Instant Pot pressure cooker. The only complaint I get from my husband is that I don't cook the same thing twice very often!

I made chicken soup last Sunday. Enough to last all week because I don't have time to cook during the week.
I make it from scratch: buy a big chicken breast and ask the seller to clean it. No skin or bones.
Put it in a pot with a cup of rice, potatoes, zucchinis, and carrots cut in big chunks. Add half an onion, garlic, salt and pepper to taste and cook.

Delicious! :D

sorry :D will be no pix's today.
had dr appt for ear, (exhausting) to which i was told.......completely deaf in the one ear, now they want to know why, so they are setting me up for a scan and then a consultation (lost hearing approx 2 1/2 to 3 years ago)
SOooooooooo back at it tomorrow, breakfast :D

This was my first shot at a smoked meatloaf with a smoked gouda cheese in the center. It was moist and tender and just as savory as I like it. :love:

babes didn't get home early enough yesterday, so i chose to forgo any real cooking. Ended with home cooked bacon chz burgers.

whats for breakfast: biscuits, sausage gravy, sausage, scramble eggs, homemade hash browns, maybe homemade french vanilla iced coffee.

We had sea bass with pesto and tomatoes and golden vegetable rice last night but I didn't take a pic as I didn't know this thread existed :haha:

That's one of our fave mid week meals - quick, easy and super tasty :thumbsup:
