Coconut Chocolate Chips and Snickerdoodles, here.

I'll make "mud" tomorrow, so it will be fresh. It's called "dirt" in some places. Does this dessert exist everywhere? It's three layers, repeated 2-3 times: 1. crushed Oreos, 2. cream cheese mixed with whipped cream, and 3. chocolate pudding. You can also make "sand" with crushed vanilla sandwich cookies and vanilla pudding.

I have several variations of common recipes, but here are the ones I'm using today.

Chocolate Chips

* 1 cup unsalted butter softened (or replace any part 1:1: with vegetable oil)
* 1 cup packed light brown sugar (or 1/2 cup)
* 1 cup granulated sugar (or 1 1/2 cup)
* 2 eggs
* 3 cups all-purpose flour
* 1 teaspoon baking soda
* 1 teaspoon baking powder
* 1 teaspoon salt
* 1 teaspoon vanilla extract
* 2 cups chocolate chips semisweet, milk, dark or a mix
* (optional) 2 cups shredded coconut

1. Preheat the oven to 350 degrees F. Lightly grease a baking sheet and set aside.

2. In a stand mixer (or with a hand mixer in a large bowl), cream butter and both sugars. Add eggs and beat until fluffy.

3. Add flour, baking soda, baking powder, salt and vanilla, and mix until incorporated.

4. Fold in chocolate chips. Use a medium cookie scoop to scoop dough, roll into balls and place onto the prepared baking sheet.

5. Bake for 9–11 minutes.

6. Let cookies sit on the cookie sheet for a few minutes, then remove to a rack to cool.

Snickerdoodles

* 2 ¾ cups all-purpose flour
* 2 teaspoon cream of tartar
* 1 teaspoon baking soda
* ½ teaspoon salt
* 1 cup unsalted butter, just softened
* 1 ½ cups sugar
* 2 eggs
* 1 teaspoon vanilla extract

* ⅓ cup sugar
* 2 tablespoons cinnamon
(this was waaay too much... trying 1/8 cup sugar and 2 teaspoons cinnamon next time)

1. Preheat oven to 350°F.

2. In a large bowl, mix together flour, cream of tartar, baking soda, and salt together. Set aside.

3. In a stand mixer, cream together butter (barely softened) and sugar. Add eggs and vanilla and blend well.

4. Add dry ingredients to wet ingredients and mix well.

5. In a small bowl, combine remaining ⅓ cup sugar and 2 tablespoons cinnamon.

6. Use a small cookie scoop to scoop out dough, roll into a ball and then roll into the cinnamon sugar mixture- twice.

7. Place 2 inches apart on an ungreased cookie sheet.

8. Bake for 8 – 10 minutes. Let sit on the cookie sheet for a few additional minutes before removing to a wire rack to cool.

I did all my meatpies (1 vege...3 big and 12 small)...shorthbread(151)..chocolate fudge cupcakes (59) and crack sticks (16)...I am sooooooo done lol

The honey and cinnamon step in front of the cheesecake tang. The butter also works into it as it bakes the top layer crispy. It's perfect.

Cookie Monster, you're living up to your name!

Only cooked regular Christmas food yesterday and some hot chocolate cinnamon rolls. My baking occured on Christmas Eve and the day before. Cider and nuts and bolts were made for presents.

I still haven't made my grandmother's Christmas cookies and had bought special Austrian cutters for them, but oh my gosh the food. Maybe sometime soon once we put a dent in everything else. :dizzy:

I need to get back into baking. I've been obsessed with sewing lately, so I don't bake as much. I gues that's a good thing. If I bake too much, I won't fit into what I'm sewing. :haha:
