For my videos I usually use bandicam, it's safe and free to use unless you want the full version that costs money. The unregistered/free version is available to anyone, but it has limits. It only lets you record 10 mins at a time (but of course you could always stop the video and start a new one to keep recording) and it puts a watermark at the top of the screen "www.Bandicam.com" which can get annoying!

People also use HyperCam like Paris said, but the watermark is even BIGGER... yikes! I like bandi because it's easy to use, the controls are easy and you can record the audio as a separate file too..
